Frikkadels.
The first time I had Frikkadels was in a pizza. See The Best Pizza EVER.
Our boy and I had eaten a pizza that had a meatball crust and those super yummilicious meatballs were South African style and called Frikkadels.
I was intrigued by these meatballs and decided to make some on my own. This recipe is my version because I couldn’t find a recipe that I liked online. Most had too much tomatoes in the meatballs for my taste and required slow pan-frying, which I dislike because I believe we lose the juices that way and the splattering of the oil will mean a painful clean up later.
So this was easy and delicious. They are not like your IKEA kind of meatballs at all. They are succulent and soft, with a toasty crust. And even better re-heated the next day in a lunch box for work (ask the hubby). I served them with mashed potatoes and broccoli tenderstems. YUM.
